Kombu liquid soup stock is made by extracting Hokkaido kelp and concentrating it 50 times. You can easily make a full-bodied kelp borth by just diluting it as well as to add gentle umami flavours to cold soup and cooked rice or as sushi vinegar, and in dressings or sauces.
