Hikari Miso uses organic JAS certified soybeans cultivated in compliance with strict standards, domestic rice with a plump texture and good aroma, and sun-dried salt containing minerals from seawater. 25% less salt (sodium) than the Hikari Miso's "Organic Mature Koji Miso". It is an additive-free miso paste that does not use chemical seasonings or preservatives and has well-balanced umami derived from soybeans and sweetness derived from rice koji.
