You can enjoy the noodle's firmness which tastes like never before by a multi-hydrolysis ageing method with natural groundwater. The noodles do not absorb the water in soup easily therefore the firmness lasts until the end. A soy sauce which is aged in wooden barrels for 1 year is used for the soup.
