White miso with a refined and mild sweetness, made using plenty of rice koji. It is smoother and easier to cook with compared to regular miso, with about half the salt content. It's recommended for dishes like Saikyo-zuke (Kyoto-style pickles), mixed miso dishes, and miso soup.
