Description
The "Gin no Yume" rice used in the creation of Suigei Junmai Ginjo Koiku 54 is the first sake rice variety cultivated in Kochi Prefecture. The breeding process was handled by the Kochi Prefecture Agricultural Technology Centre, while Suigei conducted brewing trials. After repeated testing, a variety that is perfectly suited for sake brewing in Tosa was born. The name "Koiku 54" is derived from the test number "Koiku Sake 54" of the breeding process for "Gin no Yume" rice.To bring out the best qualities of the rice, traditional in-house yeast is used, and the sake is carefully brewed using spring water from the headwaters of the Kagamigawa River. The rich umami, drawn out from the excellent ingredients, gives a solid and distinct flavour. Additionally, the refreshing citrus-like acidity and subtle ginjo aroma provide a light and smooth mouthfeel, enhancing the flavours of the dishes it is paired with.
