Description
To bring out the best in the ingredients, the rice was polished to a 55% polishing ratio. The raw rice varies in characteristics depending on its origin and variety. We carefully assessed these unique traits and meticulously managed the brewing process and fermentation. For koji production, we aimed to create robust koji, and combined it with our proprietary yeast and pure spring water from the headwaters of the Kagami River. The sake was brewed slowly at low temperatures. After pressing, it is stored in chilled tanks and bottled as needed to match shipping volumes. This junmai sake combines the rich umami of rice with a clean and crisp finish. The aroma is intentionally subdued, featuring Suigei's signature acidity. It offers a balanced yet sharp taste with depth, making it an excellent pairing with food and an ideal choice as a meal companion.
