酔鯨 特別純米酒は 、素材の良さを引き出す為に精米歩合は５５％まで磨いています。原料米は産地や品種によりその特性が異なり、それぞれの特性をしっかりと見極め、仕込み・もろみ管理を行なっています。麹造りは力強い麹を目指して造り込み、自社酵母、鏡川の源流水とともに低温でじっくりと醸しています。搾り後は低温のタンクに保存し、出荷量に合わせて適時瓶詰めしています。米の旨みにキレの良い後口を組み合わせた純米酒は、香りはあくまで控えめで、酔鯨特有の酸味があり、幅があるのにキレがある味わいに仕上がっています。お料理との相性が良く食中酒に最適です。
