Dassai is a brand of Junmai Daiginjo sake developed by Asahi Shuzo Co. since 1990. Dedicated to great taste, we distanced ourselves from the traditional sake production system by not having a toji (master brewer) and by making our sake ourselves. In the pursuit of good taste, we chose to use whatever is available to us: being IT, technology or labor. Today, over 120 production staff making Dassai in our 12-story high sakagura. At Asahi Shuzo, we do not rely on tradition but rather strive to create the best sake possible through constant innovation.
