酔鯨 純米吟醸 高育54号に使用される原料米「吟の夢」は高知県で初めて育成された酒造好適米です。品種開発においては高知県農業技術センターが育種過程を、酔鯨が醸造試験を担当しました。さまざまな試験を繰り返し、土佐の酒造りに適した品種が誕生しました。商品名の「高育５４号」は、原料米「吟の夢」の育種過程の試験番号「高育酒５４号」から命名されました。酵母には原料米の良さを引き出せるよう伝統的な自社酵母を使用し、鏡川源流域の湧水でじっくりと醸しています。素材の良さを引き出した旨みは、しっかりとした味を感じさせます。また爽やかな柑橘系の酸味とほのかな吟醸香は軽快な飲み口を演出し、合わせるお料理の美味しさを引き出します。
