Unlike conventional sake, kijoshu is brewed using sake in place of some of the brewing water. This traditional method creates a naturally rich, sweet and full-bodied drink. After eight years of careful ageing, it develops a smooth, velvety texture with complex aromas of raisins and nuts. Its concentrated sweetness is beautifully balanced by refreshing acidity, creating an elegant finish reminiscent of sherry or Madeira wine.
