Miso aged for over 1.5 years in wooden barrels made of Japanese cypress to enjoy the rich, deep flavors unique to natural brewing. It can be used not only for miso soup, but also as a hidden flavor in dishes like pasta and curry. It is also delicious eaten as-is, for example with vegetable sticks or on top of caprese salad. Unlike most soybean miso, this is a gluten-free product.
