In 2004, the 280th anniversary of Saura's founding, to preserve the old-fashioned sake brewing tradition and to pass on the wooden barrel culture, they revived the wooden barrel method for the first time in about half a century. Saura would like to rethink traditional sake brewing with the warmth of nature. The late Mr Shigekazu Hirano (honorary chief brewer), who was the only sake brewer in the brewery who knew about sake brewing using wooden barrels, passed on the traditional techniques to younger brewers to make this sake. Rich and dry, proounced and complex with cedar notes.
