Our Dashi Kombu is made from premium Makombu kelp harvested in southern Hokkaido, Japan – widely regarded as the finest quality kombu available. This high-grade Hokkaido kelp is prized for producing a clear, refined dashi with a naturally delicate sweetness and deep umami flavour.

Rich in minerals from the cold northern seas, Makombu creates a mellow yet full-bodied Japanese soup stock that enhances the natural taste of other ingredients without overpowering them. It is an essential ingredient for making authentic Japanese dashi and is ideal for miso soup, noodle broths, hot pots, stews and simmered dishes.
