Ingredients

  • 2 piecesSkin-on Salmon fillets

Miso Glaze

Cooking Steps

  1.  Preheat oven to 220°C.
  2. Mix miso and mirin in a small bowl. Add cooking sake and sugar if preferred (optional).
  3. Brush the miso glaze evenly over the salmon.
  4. Leave to marinade for 15 mins or more to allow the flavour to infuse the salmon. Marinade in fridge for 2 hours for more depth of flavour.
  5. Grease a small baking tray with oil and place salmon fillets with skin side down. Remove excess miso sauce from the salmon as miso is very easy to burn.
  6. Grill the salmon in the oven for 10 - 15 minutes until cooked. Alternatively, pan-fry the salmon until cooked through.
  7. Serve with salad leaves and steamed rice.

Tips

1. Marinate the salmon for a deeper flavour
A 15-minute marinade is enough for a light flavour, but for a richer result, leave the salmon in the fridge for 1–2 hours before cooking.

2. Remove excess miso before cooking
Miso can burn quite easily because of its natural sugars and the mirin in the glaze. Lightly scrape or wipe away any excess glaze before placing the salmon under high heat.

3. Keep the salmon skin-side down
Place the salmon skin-side down on the baking tray. This helps protect the flesh from direct heat and makes the fillets easier to handle after cooking.

4. Watch the glaze carefully towards the end
The miso glaze can caramelise very quickly. Check the salmon during the final few minutes of cooking and reduce the heat slightly if the surface is browning too fast.

5. Avoid overcooking the salmon
Cook the salmon until it is opaque and flakes easily with a fork, while still remaining moist in the centre. Overcooking can make the fish dry.

6. Adjust the sweetness to your taste
For a sweeter Japanese-style miso glaze, add a small amount of sugar. If you prefer a more savoury flavour, simply use the miso and mirin.

7. Serve with steamed Japanese rice
Plain steamed rice works particularly well with Miso Glazed Salmon, as its mild flavour balances the rich, savoury-sweet miso glaze.

FAQ

Q.What is Miso Glazed Salmon?

A.Miso Glazed Salmon is salmon coated in a savoury-sweet Japanese-style glaze made with miso and mirin, then cooked until tender and lightly caramelised. The miso adds deep umami flavour, while mirin contributes gentle sweetness and helps create a glossy finish.

Q.How long should you marinate salmon in miso?

A.Salmon can be marinated in miso for as little as 15 minutes, although 1–2 hours in the refrigerator will give a deeper flavour. Avoid leaving it in a strong miso marinade for too long, as the saltiness can eventually affect the texture of the fish.

Q.Can you pan-fry Miso Salmon instead of grilling it?

A.Yes, Miso Salmon can be pan-fried instead of oven-grilled. Remove excess miso glaze first, lightly oil the pan and cook the salmon over medium heat until cooked through. Keep the heat moderate because miso and mirin can burn easily.
