Description
Shiitake mushroom is one of the most used fungi in Japan. Because of its rich nutrition, fragrance and taste, it is known as "the king of mushrooms" and "the crown of vegetables". Shiitake has the nutritional characteristics of high protein, low fat, polysaccharides, multiple amino acids and vitamins. Dried shiitake has the features of low water content, long storage time and convenient use. After soaking and cleaning, they can be used for frying, making soup stock and cold mixing. Each of them has been carefully selected and its diameter is between 3-5cm.
Rinse gently with water and soak overnight or until soft. If you’re in a hurry, soak in lukewarm water for around 30 minutes. For faster use, soak in hot water and simmer for 2–3 minutes. However, for the best flavour and richer broth, slow soaking is recommended.
