Crispy on the bottom and juicy inside, these Japanese Pan-Fried Gyoza are quick and easy to prepare at home. Yutaka Chicken Gyoza are first pan-fried until golden, then steamed with a little water to create the classic combination of a crisp base and tender wrapper.

Serve them hot with a simple homemade gyoza dipping sauce made with Yutaka Soy Sauce and Rice Vinegar, with an optional splash of chilli oil for extra heat. Perfect as a Japanese appetiser, side dish, party food or quick snack.

Cooking Steps

  1. For frying and steaming gyoza, use 24 cm size of a non-stick frying pan with lid.
  2. Heat the pan to high, then add the oil.
  3. Put about 12 gyoza quickly into the pan, wait until bottom of the gyoza to brown for 1-2 minutes.
  4. Pour 80ml of water (depending on the size of the frying pan) into the pan from rim, then cover with the lid. Reduce the heat to medium low, steam for 4 mins.                                       
  5. After the water has evaporated, the bottom of gyoza should be crispy again.
  6. To keep the bottom of the dumplings crisp, serve it upwards.

Tips

1. Cook the gyoza straight from frozen
There is no need to defrost Yutaka Chicken Gyoza before cooking. Place them directly into the hot frying pan from frozen for an easy and convenient Japanese appetiser.

2. Give each gyoza enough space
Arrange the dumplings in a single layer without overcrowding the pan. This allows the bottoms to make direct contact with the hot surface and develop an even golden crust.

3. Brown first, then steam
Fry the gyoza for around 1–2 minutes before adding water. This initial frying stage helps create the crisp, golden base that is characteristic of Japanese pan-fried gyoza.

4. Keep the lid on while steaming
After adding the water, cover the pan immediately and reduce the heat. The trapped steam cooks the filling and softens the upper part of the wrapper while the base remains against the hot pan.

5. Let all the water evaporate for a crispy finish
Once the gyoza have steamed, remove the lid and allow any remaining water to evaporate. Let the bottoms sizzle briefly again if necessary to restore their crisp texture.

6. Serve the crispy side facing up
Transfer the cooked gyoza to a plate with their golden bottoms facing upwards. This prevents trapped steam from softening the crispy surface.

7. Adjust your dipping sauce to taste
Mix Yutaka Soy Sauce and Yutaka Rice Vinegar for a simple classic-style dipping sauce. Add a small splash of chilli oil for heat, or adjust the soy-to-vinegar ratio depending on whether you prefer a saltier or more tangy flavour.
