Shaoxing Rice Wine is a protected name. Shaoxing Rice Wine can only be legally labelled if it is made of glutinous rice, wheat, and water from the specific lake, Jianhu in Shaoxing, Zhejiang province, China. Pagoda Brand winery is located on the shore of Jianhu Lake. Pagoda Brand is 100% handmade with a minimum of 11 months of natural fermentation. Not a single bottle is a short-time mass production under the Pagoda Brand. HUA TIAO means flowery patterns carved on the wine jars. People in Shaoxing have the tradition of burying a jar of Shaoxing Rice Wine in engraved jars in the garden when a daughter is born in the family. They enjoy a specific jar of wine at their daughter’s wedding banquet. Perfume of almonds, with a hint of vanilla and honey. Both amber colour and palate profile remind very much of sherry, with elegant, subtle and persistent flavour.
