ますだ製麺五島手延うどんは、長崎県五島市で、伝統の手延製法で作られています。島の特産である食用椿油を塗布〈とふ〉しながら、棒状の生地を２本の箸にかけて延ばしていく作業を繰り返し、紐状の細い麺にしていく過程でしっかりと熟成を重ね、じっくりと乾燥させます。この伝承の技を受け継ぐ麺匠の腕によって、コシが強く、切れにくい五島うどん特有の麺へと仕上がります。白磁のように艶〈つや〉があり、プルンと滑らかな食感と、麺自体の持つ豊かな風味と椿油が調和して、シンプルでありながらも、奥深い味わいを引き出しているのが、最高品質を誇る五島うどんの特長です。温かいメニューはもちろん、冷麺でもお楽しみいただけます。
