「ミルキークイーン」は、こしひかりの突然変異からうまれた低アミロース米品種で、もっちりとやわらかめの食感が人気のお米です。アミロースはお米の粘りに関係しており、アミロースの含有量が少なくなるほどごはんの粘り気は強くなり、もちもちとした食感になります。そんな低アミロース米の代表選手とも言える「ミルキークイーン」は、コシヒカリよりアミロース含有量が低く、炊飯後の粘りの強さと、つやつやとした炊きあがりが特徴です。
